Pineapple Bitter Gourd Chicken Soup
A bright, subtly sweet Taiwanese soup where tender chicken and crisp bitter gourd meld with pineapple and Hondashi® for a refreshing, palate‑cleansing broth.

INGREDIENTS
4 oz – bitter gourd, deseeded and sliced
9 oz – chicken leg, diced
7½ cups – water
1 oz – pineapple, pickled or fresh
2 tbsp – hondashi®
1 tbsp – rice wine
1 tbsp – sesame oil
Salt and white pepper, to taste
DIRECTIONS
1. Blanch bitter gourd and chicken in boiling water briefly; drain and set aside.
2. In a pot over medium heat, combine water, bitter gourd, chicken, hondashi®, rice wine, sesame oil, salt, and white pepper; bring to a simmer.
3. Simmer gently for 40 minutes, then serve.
