100 years of dedication

AJINOMOTO®‘s story began in 1908 when scientist Dr. Kikunae Ikeda discovered the source of umami, monosodium glutamate. From this, AJI-NO-MOTO® seasoning was born and the namesake company. For the next hundred years, Ajinomoto continued creating breakthrough innovations in food and nutrition globally. Today, AJINOMOTO®‘s frozen foods can be found in stores all over the world.


The essence of umami

Umami is one of the five basic tastes. It is described as a “meaty” flavor or “savory deliciousness.” Umami is essentially a taste of glutamate, an amino acid that occurs naturally in many delicious foods, such as tomatoes, cheese, cured meats, and mushrooms.

AJI-NO-MOTO® MSG contains glutamate in an easy-to-use form. It is produced through the natural fermentation of plant-based ingredients including sugar cane, sugar beets, cassava or corn. AJI-NO-MOTO® is a versatile seasoning that enhances flavor easily and safely.

The amazing flavor of HONDASHI® starts from high-quality, low-fat bonito (skipjack tuna) from the Pacific Ocean. Master craftsmen then use oak to smoke the fish up to two weeks using age-old techniques.

The resulting rich, smoky aroma and umami kick are sealed in granules, which dissolve easily in any application. HONDASHI® is a convenient way to create perfect, authentic Japanese dashi stock without spending hours in the smoke shed and in the kitchen.
