Foil Baked Salmon
Moist salmon filets baked in foil with sliced carrots, zucchini, and edamame, all coated in a creamy Hondashi®‑sake‑mayonnaise sauce and topped with enoki mushrooms and cheese for a simple yet elegant entrée.

7 oz salmon filets

½ oz enoki mushrooms

2 tbsp Japanese mayonnaise

1 tbsp sake (rice wine)

½ tsp Hondashi®

2 tbsp shredded cheese

½ cup edamame
-
½ cup sliced carrots

½ cup sliced zucchini

DIRECTIONS
1. Preheat the oven to 400 °F.
2. In a small bowl, whisk together Hondashi®, sake, and mayonnaise to form the sauce.
3. Place salmon filets on a sheet of foil and arrange carrots, zucchini, and edamame around them.
4. Pour the sauce over the salmon mixture, then sprinkle with enoki mushrooms and shredded cheese.
5. Fold the foil into a sealed packet and bake for 10 minutes.
