Crispy hane-style gyoza in a few easy steps

Place gyozas
in pan

Without adding cooking oil, place gyoza about half an inch apart in a circular shape flat side down on a good condition non-stick pan over medium-high heat.

Add water

Slowly pour 3 oz. (about 1/3 cup) of water into the pan. Cover and cook for about 7 minutes to heat dumplings through.

Uncover pan

Once dumplings have cooked through, uncover the pan. Continue to pan-fry until the lacy “wing” is golden and water evaporates.

Flip the pan!

Turn off heat. Carefully flip the pan onto a heat-safe plate and serve bottom side up. Use caution—contents will be hot.
